Corned Beef Hash, Eggs, Toast and Fruit
If you make corned beef and cabbage for St. Patricks day dinner, you can use the leftovers tomorrow morning for corned beef hash and eggs. It’s easy, delicious, and probably much healthier than the greasy kind you might get at the local diner.
Cut up 1 small onion or shallot and saute in a bit of olive oil. Add some of the leftover cooked potatoes from your corned beef dinner, and a few slices of cooked corned beef, diced. Add a few tiny slices of butter, if you like, some salt and pepper to taste and saute till the potatoes get nice a crispy. Serve with an over easy egg, some rye toast and fresh fruit. YUM!
p.s. You can also do this with corned beef you buy at the deli counter. Just chop it up and cook with leftover cooked potatoes and shallots or onion.

First trip to Oregon, overnighting in the little town of Jacksonville. I had two goals for this trip: I wanted to get my picture taken next to an enormous chainsaw, and I wanted to eat an honest, prescription-grade Lumberjack Breakfast. I felt that with both of these experiences under my belt, I could say that I’d experienced the alpha and the omega of the state. Walked around the main drag on Saturday morning, but the only restaurant open was a jewish deli. So: out with the mile-high stack of pancakes and pile of bacon. In with pastrami and eggs, challa toast, potato latkes, and fried corned beef. Not a bad trade.
