Breakfast…
poached eggs on toast with cream cheese and garden fresh tomatoes.
I woke up this morning craving eggs benedict. Sadly, I’ve never been able to make either poached eggs or hollandaise sauce. I’ve tried everything. I even had one of my chef friends carefully write down very simple instructions for both and still I wasn’t able to get either right. I know that these days you can get all sorts of contraptions to make poached eggs with ease, usually in the microwave. But I believe the only way to make them is in a pot of boiling water.
Today a miracle happened and I finally got it right. This was my first attempt at poached eggs this year. Perhaps I used the right amount of vinegar this time or cooked them for long enough. I have no idea. All I know is that they were perfection. The white surrounded the yoke beautifully and the yoke was warm, rich and runny. It’s a nice start to a hot summer’s day.
Now all I need to master is hollandaise sauce.

Genius Breakfast: Salmon & Lox Eggs

I’m sure this is not a new concept to some of you, but this morning I created some eggs that sort of blew me away. All I did was add an ounce or two of smoked salmon and a couple tablespoons of full-fat cream cheese to two scrambled eggs (when they were about halfway done). It’s the taste of a bagel without the empty calories! Also, I love lox and would eat it on pretty much anything.

Feel free to go nuts with your “bagel” eggs. Add capers, chopped tomatoes, red onions, or whatever other toppings would usually adorn your bagel.
