SUNDAY BRUNCH Potato Latkes
I first came across these babies when I was about fifteen working at a senior retirement community.  It was in Palm Beach county in Florida, so most of our residents were Jewish and potato latkes were a frequent suspect in the menu.  Even though most time they were greasy and soggy, I always saw the potential in what these crunchy, creamy, heavenly cakes could achieve. The recipes below prove my point:

First trip to Oregon, overnighting in the little town of Jacksonville. I had two goals for this trip: I wanted to get my picture taken next to an enormous chainsaw, and I wanted to eat an honest, prescription-grade Lumberjack Breakfast. I felt that with both of these experiences under my belt, I could say that I’d experienced the alpha and the omega of the state. Walked around the main drag on Saturday morning, but the only restaurant open was a jewish deli. So: out with the mile-high stack of pancakes and pile of bacon. In with pastrami and eggs, challa toast, potato latkes, and fried corned beef. Not a bad trade.
