Sunday Brunch at The Publican: Red Wine Poached Egg with La Quercia Prosciutto. Chicago, Illinois. I love the colors in this dish - gives new meaning to the term “eat a rainbow”.
I had Eggs Benedicts Breakfast- English style -for dinner last night.
Oh Lord, teach me how to make breakfast like this.
Pretty kickass little breakfast sandwich I just made for myself…
- fried egg (in butter, duh)
- paper-thin prosciutto (kissed with some high heat)
- sliced asparagus
- grated fresh parm (via my fantastic new microplaner, h/t iseeellis, thx!)
- whole grain mustard
- toasted whole wheat sourdough

Eggs piedmont
My brunch order consisted of two poached eggs topped with tomato hollandaise sauce, over grilled bread with crispy prosciutto and home fries. Have I mentioned how much I love hollandaise sauce?

Ingredients:
4 eggs
1/2 cup milk
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon vanilla extract
4 slices thick texas toast or multigrain bread cut thick
6 slices thin slices prosciutto
Buttermilk or Maple syrup
Instructions:In a wide shallow dish, whisk together 2 of the eggs, milk, sugar, cinnamon, nutmeg, and vanilla extract.
Using a biscuit cutter, cut a hole in the center of each of two slices of bread. Put all four slices of bread in the egg mixture and let them soak for one minute on each side.
In a skillet large enough to fit the bread slices in one layer, melt the butter over medium-high heat. when the foam subsides, transfer the bread to the pan. Crack one egg into each hole in the bread slices. cook until the bread is well browned on the bottom, about three minutes. Turn the slices over and cook until the second side is well browned, about two minutes. Remove from skillet.
In the same skillet add the prosciutto to heat for 15-20 seconds.
Place one of the hole-less bread slices on each of the serving plates. Lay three slices of prosciutto over each and top with the bread slices with egg. Drizzle with buttermilk syrup and serve.
