behold, the delicious dan bing (蛋餅). literally means egg pancake (sometimes egg pie at places with english menus). can be found at nearly every breakfast stand/shop on this island. it is kind of like a crêpe, but wrapped around an fried egg and some other savory filling. ham or bacon dan bing are my favorites, but you can also get it with tuna fish, shredded pork and even corn. typically served with sweetened and thickened soy sauce.

During my three week vacation in LA I went to my favorite breakfast burrito place of all time. LUCKY BOYS. The last time I had one of these bad boys was 6 months ago, and that first bite of sausage and bacon and egg and hash-brown and salsa…omgomgomg. I love it. Best 2,000 calorie meal ever.

Amanda and I went down to Corpus Christi, Texas for a family reunion. Amanda reminded me of my cool cousin Yvette and Jerry, her fella. who offered us a spare bed to crash on. The next morning was a gradual process of climbing out of bed. Both Yvette and Jerry made us breakfast -some South Texas Breakfast Tacos - Huge and satisfying. A day without a breakfast taco is a day wasted, I believe.
If you like a savory breakfast you’ll love these enchiladas. I froze the leftovers and am happy to report that they are just as good after they’ve been frozen, too. While they are a bit time-consuming to make it was totally worth it knowing I have a hot, home-made breakfast waiting for me everyday this week.
This South India inspired crepe cigared together crisp strips of bacon and creamy scrambled eggs. The brittle salinity of the pork, the smooth subtly of the eggs and the slight sour tang of the bread made for a new and delish take on pigs (and chicks) in a blanket.
